National Student Money Week - Survive and Thrive: Building financial resilience
We know money is tight and the cost-of-living crisis is still affecting many of our students, that’s why this year we are using student money week to provide you with access to a variety of free food and some top tips for making your money stretch. Free Fruit
All week there will be a variety of free fruit for you to help yourselves to in the Undeb. Come and get a tasty snack to keep your energy up for your studies, reduce your costs, get some vitamins in you and enjoy some lovely fresh fruit!
Money Tree
Why not add your top money saving tips to our money tree. At the end of the week, we shall collate all of your suggestions to release as an article you can go back to as and when needed.
Cook-along with your Undeb President Bayanda
Come and collect one of 50 bags full of ready to cook ingredients from the Undeb.
Coconut & red lentil dahl recipe
Ingredients:
Red lentils 200g
1 Onion
3 cloves Garlic
1 nub of Ginger grated or chopped
Spice mix - cumin, coriander, turmeric, garam masala, chilli flakes
Vegetable stock cube
Chopped tomatoes 400g
Coconut milk 400g
Pilau rice
Method:
step 1
Heat a glug of oil in a large pan over a medium heat. Fry the onion gently for 5 minutes. Add the garlic, ginger and red chilli and cook for a few minutes more.

Whilst that is cooking, add to the pan spice mix and cook for 1 minute until fragrant.
step 3
Add the lentils along with the tomatoes, coconut milk and stock, then stir to combine. Season with salt and pepper and cook on a medium/low heat until thick - at least 15-20 minutes (stirring often so that it doesn't stick to the pan). Taste and add more chilli if desired.

Cook the rice following the packet instructions.
